You don’t have to live on Popsicles and S’Mores when you’re camping – unless you love them enough to prefer it that way. You can prepare and enjoy many of the delicious desserts you normally eat at home. Blueberry Cobbler is an example of a real crowd pleaser. Who doesn’t love a good cobbler? One bite and you are transported back in time to when you were a kid and your mom or grandmother made their cobbler specialty for you.
2 pints blueberries
1/3 cup plus 1/4 cup granulated sugar
1 1/2 cups plus 1 tablespoon all-purpose flour
2 teaspoons baking powder
1/4 teaspoon kosher salt
1 teaspoon grated lemon zest
6 tablespoons cold unsalted butter, cut into pieces
To make this tasty treasure you will first be adding the blueberries, sugar, and a tablespoon of the flour to a baking dish or deep pie plate. In a separate bowl you will combine the rest of the ingredients in the manor they describe here Blueberry Cobbler. Now drop the dough on top of the berry mixture and bake. It really couldn’t be easier and you won’t have a problem calling the family in to eat once they smell this cooking. You can also substitute the blueberries with blackberries or raspberries, if your family prefers them over blueberries. Or maybe try it with strawberries and some rhubarb. Wouldn’t that be delish?
We hope all of your camping meals are delicious and nutritious but most of all we hope they include dessert. Happy camping!
